On the hunt for a chocolate beet cake? So am I. We tried making a chocolate beet cake in a bundt pan.

When my oldest daughter got married they purchased their cake from a bakery in Sebastopol, CA. It was so pretty they chose a simply decorated cake. The cake had buttercream frosting with the addition of a few flowers added. It sat on a rustic wood cake stand made by my son.

Why am I telling you all this? Well, the cake they picked from their tasting was a dark chocolate beet cake with a filling that I have tried to make at home. I have been on the hunt for a chocolate beet cake recipe similar to their wedding cake ever since then.

The cake I am sharing was very good. But, it was denser than the wedding cake. Still, it was delicious. This cake was easy to make. The steps are simple. You can frost or glaze the cake if you want it sweeter. 

I thought you might enjoy this for recipe Valentines Day! The cake has some unexpected flavor. Adding a naturally sweet addition to the cake. I could of mashed up the beets a bit more but, didn’t find it necessary. It would be a matter of preference.

Don’t have beet lovers in your home? You can finely mash the beets. They will never be the wiser when they eat it!

Chocolate Beet Cake In A Bundt Pan

Chocolate Beet Cake - this is an easy bundt cake recipe that has fresh beets inside. The combination of chocolate and beets is a winner!

Chocolate Beet Cake made in a bundt pan. An easy cake recipe that makes a dark chocolate beet bake. The final cake is slightly dense but delicious. Pair it with your favorite coffee and it's so good.

Cook Time 45 minutes
Total Time 1 hour 5 minutes

Ingredients

  • 3 medium beets, stems and tails removed
  • 1-1/2 cups unbleached all-purpose flour
  • 1/2 cup whole-wheat pastry flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon kosher salt
  • 4 ounces unsweetened chocolate
  • 1/2 cup canola oil, divided
  • 3 large eggs
  • 1 and 3/4 cups granulated sugar
  • 1/2 cup plain, non-fat Greek yogurt
  • 1 tablespoon vanilla extract
  • confectioners' sugar (optional)
  • 3 ounces reduced-fat cream cheese (Neufchatel), softened
  • 3 tablespoons powdered sugar, sifted, plus extra if needed
  • 2 tablespoons milk, plus extra if needed
  • 1/4 teaspoon vanilla extract

Instructions

How to cook the beets for the cake

  1. Preheat the oven to 400 degrees F.
  2. Wash beets and place in a small roasting pan with 1/2 cup water. Cover and bake for 45 minutes to 1 hour, or until easily pierced with a fork.
  3. Dunk the beets in cool water, then using your fingers, slip off the peels. Coarsely chop, then transfer to a blender or food processor and puree.
  4. Measure out 2 cups and set aside.

For the Beet Cake

Reduce the oven temperature to 375 degrees F.

  1. Lightly coat a 10-cup Bundt or tube pan with oil and dust with flour. Set to the side until needed.

Mix the dry ingredients

  1. In a large bowl, sift together the all-purpose flour, whole-wheat pastry flour, baking soda, and salt. Set aside.

Melt the Chocolate

  1. In a double boiler or a small pan over low heat, add the chocolate and 1/4 cup of the oil.
  2. Heat just until the chocolate melts.
  3. Remove from the heat and stir until well combined. Set aside

Begin mixing it all together

  1. In a large mixing bowl, beat together the eggs and sugar until fluffy.
  2. Slowly add the remaining 1/4 cup oil
  3. Greek yogurt
  4. vanilla extract
  5. Then the chocolate mixture
  6. And the 2 cups beet puree.

After combined slowly add

  1. the flour mixture
  2. Stirring by hand just until combined.
  3. Pour the batter into the prepared pan.
  4. Bake for 45 minutes......

Chocolate Beet Cake with Cream Cheese Glaze

When baking, watch it so it doesn’t over bake. My oven runs hot and I took it out fifteen minutes earlier than the stated baking time. I would venture to say if you don’t have whole wheat flour you can try just white flour. I used the recipe just the way I found it. If I try it next time I might use a few more ounces of yogurt. I really think the key to getting the recipe correct all depends on your beet size and measuring too.
